I went to the farmers market today and picked up some fresh veggies for tonight's meal. We ate quinoa with sauteed onions, garlic, mushrooms, zucchini, green tomatoes, carrots and peppers. It was packed with veggies! I also pan fried the remaining green tomatoes and oven baked, breaded zucchini. Mmmmmm.... delicious. The dish was also accompanied by fresh baked apple bread (not prepared by me).
Quinoa (pronounced Keen-wa) is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. Quinoa is high in protein, and this protein supply is a complete protein, meaning that it includes all nine essential amino acids.
